Under “Create New Profile”, pick “Choose Other Server”. There is a short list of servers available, and you can also use unlisted chatmail servers by scanning their invitation code. You can also pick a chatmail server without scanning an invitation code (by domain name).
Many chatmail servers are not listed because some autocratic governments block the chatmail servers they know about.
