I plan to setup a Chatmail server. Upon first registration, is it possible to create a custom localpart address instead of a random one ?

You don’t actually need the Chatmail server QR code. Pretend you have an account on the Chatmail server a. Make up a 9-character random string, and call it your user name. You might not want to, though. Unless you allow unencrypted e-mails (which Chatmail does not by default, although as server admin you can make exceptions), there is no particular advantage to a memorable username. Contacts are added by scanning a QR code to exchange keys. And random names offer a bit more privacy; there is nothing identifying about a random string.
